Baked Penne with Vegetables Ingredients: ⚡450 g Penne ⚡2 zucchini, cut into 1-inch cubes ⚡2 red bell peppers, chopped ⚡8 medium mushrooms, sliced ⚡1 small onion, sliced thinly ⚡5 garlic cloves, chopped ⚡3 tablespoons olive oil ⚡1 1/3 cups crushed tomatoes ⚡5 tomatoes, grated ⚡2 1/2 cups shredded mozzarella cheese ⚡2 tablespoons grated parmesan cheese ⚡2 tablespoons dried oregano ⚡salt & pepper Instructions: Preheat oven to 425F. Place zucchini, red pepper, onion and mushroom on a baking sheet. Toss with 2 tablespoons olive oil, 1-tablespoon oregano, salt and pepper. Roast in the oven until tender, about 30-35 minutes. Butternut Squash & Banana Pudding Ingredients: ⚡1 butternut squash ⚡250 g plain biscuits, crushed coarsely ⚡3/4 cup chopped walnuts ⚡2 ripe bananas, grated ⚡2 tablespoons oil ⚡1 teaspoon ground cinnamon ⚡1/2 teaspoon ground cardamom ⚡powdered sugar Instructions: First make several large slits through the skin of squash. Microwave it for 3-4 min to soften the skin. Let it rest until it is cool enough to handle. Peel it with a peeler or knife. Cut in half lengthwise and discard the seeds. Cut into 2 inches pieces. Heat 2-tablespoons oil in a pan over medium heat. Add butternut squash pieces and sauté for 3 minutes. Add 1/2 cup water and cook covered until tender, about 30 min. Drain and mash them with a potato masher. Mix together biscuit, bananas, butternut squash, walnut, cinnamon and cardamom. Add powdered sugar if needed. Refrigerate for couple of hours. Roast until tender and lightly browned, about 35 minutes. Heat 2-tablespoons olive oil in a pan over medium heat. Add onion and sauté until tender and slightly golden. Add garlic and sauté for 1 minute. Add tomato and oregano. Season with salt and pepper. Simmer uncovered for 10 minutes or until all the liquid is absorbed. Fill the aubergines equally with the stuffing and place in a baking dish. Drizzle with olive oil. Bake for 20-25 minutes at 375F. Garnish with fresh mint.
